Green Lamb's Lettuce
This vegetable produces beautiful, rounded, glossy green leaves, which are almost as rich in beta-carotene as carrots. They are also a good source of vitamins A and C, and iron. Very cold-hardy, lamb's lettuce is best sown very early in spring or late summer in compost-enriched soil. It can also be sown indoors six weeks before the estimated planting date in the garden (as soon as the soil is tillable). It is a good idea to thin the seedlings to about 15 cm to obtain larger plants.
