Eat better and live well
The issue of food is still generally considered from the narrow perspective of individual health. However, there is a growing recognition of the links between individual and collective health, and a growing understanding that human and ecosystem health are inseparable. From this perspective, a significant movement to transform practices and mentalities is gaining strength. Community or collective gardens, purchasing groups, cooperatives, solidarity markets, country tables, permaculture initiatives, and organic baskets are just some of the many forms of eco-social innovation that are helping to transform our relationship with food and enrich our knowledge.
This book is the result of a vast study of non-formal education stakeholders in eco-food education, that is, education in a community or popular context aimed at promoting an individual and collective journey towards healthy food, produced, distributed and consumed with respect for ecosystems and concern for social equity. Based on collaborative surveys conducted with the artisans of 10 eco-food initiatives, it highlights the educational dimension of these initiatives, as an added value, as a contribution to social change. It celebrates the creativity and courage of these people who are helping to reinvent the relationship with the world, from the field or the garden, that of the countryside or the city, to the plate.
